Chef and author Tamar Adler has named her five favourite restaurants in Madrid, the city she moved to in August 2025 with her husband and nine-year-old son.
Adler, who lives in the Las Letras neighbourhood, recommends Dolores, near her home, for the matrimonio – a tapas dish of anchovies and pickled white anchovies served on potato chips. She says the restaurant cures its own anchovies in vinegar and that it is always packed.
Her list also includes Farah, run by Heba Kharouf, where she recommends the lubina (sea bass) with tahini sauce, and Restaurant Sasha, which she describes as her favourite restaurant in Madrid. She says reservations open six or seven days in advance and that booking is required because it is so popular.
