A new e-seminar introduces how Nuclear Magnetic Resonance (NMR) spectroscopy can be used to identify exogenous sugar adulteration and verify the authenticity of honey. The presentation covers the principles of NMR, including targeted and non-targeted fingerprinting methods, and the interpretation of NMR data.

It also addresses the validation of authenticity markers and the role of reference databases in honey analysis. Practical advice is provided on choosing an NMR testing provider, understanding Certificates of Analysis, and recognising the limitations of database-driven authenticity assessments.

The e-seminar was produced as part of the Joint Knowledge Transfer Framework for Food Standards and Food Safety Analysis. This framework receives funding from several government bodies, including the Department for Environment Food and Rural Affairs, The Government Chemist Program for 2023-2026, The Department for Science, Innovation and Technology, The Food Standards Agency, and Food Standards Scotland.
