Olive Brine Can Be Used in Salad Dressing, Recipe Suggests

A new recipe suggests using excess olive brine to create a salad dressing, aiming to reduce food waste and enhance flavour.

  • Olive brine can be used as a flavourful ingredient in salad dressings.
  • A recipe for an olive-brine vinaigrette includes olive brine, red-wine vinegar, and olive oil.
  • The dressing can be stored in the fridge for up to a week.

Excess olive brine from jars can be repurposed into a salad dressing, according to a new recipe published today. The liquid, described as being full of savoury flavour, is suggested as a way to enhance a classic salade niçoise dressing.

The vinaigrette recipe uses three ingredients: olive brine for salt and depth, red-wine vinegar for acidity, and olive oil for substance. The dressing will not hold a stable emulsion and requires shaking before serving.

Once prepared, the olive-brine dressing can be stored in the fridge for up to a week.

What this means for you: You could use leftover olive brine from jars to make a salad dressing, potentially reducing food waste.
