A new recipe for brown butter apple and blackberry bars has been published today, 4 September 2026. The recipe, described as suitable for the autumn season, includes a rubbly oat crust, a soft fruit filling, and a crisp topping.
The recipe details ingredients for both the crumb base and topping, which include unsalted butter, plain flour, rolled oats, oat flour, light brown sugar, and sea salt. The fruit filling requires apples, caster sugar, lemon zest and juice, vanilla, a bay leaf, a cinnamon stick, sea salt, cornflour, and blackberries.
Preparation involves browning butter, mixing dry ingredients, and pressing a portion of the crumb mix into a baking tin for the base. While the base bakes, the fruit filling is prepared by cooking apples with various ingredients, thickening with cornflour, and then gently folding in blackberries. The fruit filling is spread over the baked base, topped with reserved crumb clusters, and then baked until golden.
The completed bars can be stored for up to three days in an airtight container and are also suitable for freezing when wrapped individually.
