Recipe for Coronation Chicken using leftover roast chicken published

The recipe details how to create a curried mayonnaise from ingredients such as egg, mustard, lemon juice, coriander, mango chutney, and curry powder. This homemade mayonnaise can be stored in the fridge for up to four days.

The coronation chicken itself is prepared by mixing 200-300g of pulled chicken or turkey scraps with the curried mayonnaise. It is suggested to be served topped with toasted flaked almonds and coriander leaves.

Historically, coronation chicken was devised by Rosemary Hume and Constance Spry for a banquet at Westminster School, held to mark Queen Elizabeth's coronation.
