Celebrity chef Sally Abé has shared her summer recipes, showcasing the best of British produce. With the warmer months in full swing, Sally is spoilt for choice when it comes to using fresh, seasonal ingredients in her cooking. 'Summer has to be the favourite season of any chef,' she says, 'I am so spoiled for choice right now with the bounty of beautiful British produce over the warmer months that I change the menu almost daily, so I don’t miss out on the chance to use all of it.'
One of Sally's recipes, a tomato and basil tart, is a perfect example of how to showcase the flavours of the season. The tart features a mixture of cherry tomatoes, basil, and a green sauce made with parsley, basil, mint, and dill. 'Make the green sauce first, finely chop all the herbs, put them in a blender with the rest of sauce ingredients, blitz to a coarse paste and set aside,' Sally advises.
Another recipe, a strawberry and elderflower trifle, is a delicious and visually stunning dessert. The trifle features a strawberry jelly made with frozen strawberries, sugar, and lemon juice, topped with sponge fingers soaked in elderflower cordial and Chambord liqueur. The elderflower cream is made with double cream, elderflower heads, and a sabayon made with eggs and sugar. 'The season ends very soon, so if need be use 1 tbsp elderflower cordial instead,' Sally notes.
