Chablé Yucatán is a five-star boutique hotel set in the Mexican jungle, 45 minutes from Mérida airport. It is the first hotel from Mexican-owned company Chablé, which also has a second property on the coast near Playa del Carmen and a third due to open on Mexico's west coast in the next few months, focusing on farm-to-table dining and local wines.
Guests stay in private casitas nestled among the trees, each with a patio, sun terrace, hammock and plunge pool. Family villas sleep up to six, while the Presidential and Royal Villas sleep up to eight.
Dining centres on local, seasonal Yucatán cuisine. The farm-to-table Ixi'im restaurant is Chablé's Michelin-starred flagship and holds the world's largest collection of tequila, with 3,600 bottles. The open-air Ki'ol eatery serves poolside dishes, and Mexican wines from Baja California appear on menus across the bars and restaurants.
Activities include a four-course Mayan breakfast prepared by local cook Doña Tere, a bike tour of the grounds and gardens, and workshops on Mayan cooking, pressed flowers, breathwork and tequila tasting. The wellness centre offers daily classes, fitness areas, an outdoor pool and spa treatments set around the hotel's cenote.
Rates start from $1,019 a night for a casita with a private pool, including breakfast and taxes.
