Chef Gurdeep Loyal has provided a recipe for Turkish lamb and hot pepper paccheri, a dish referred to as markana in Turkey. The recipe incorporates acı biber salçası, a spicy Turkish paste made from concentrated cooked red peppers and salt.
The dish is prepared with lamb mince, cumin, garlic, tomato puree, and dried mint, and is traditionally served with garlicky yoghurt and a drizzle of chilli butter with pul biber and sumac. The recipe suggests using a large pasta shape like paccheri to hold the filling.
